The William Fevre Petit Chablis comes from vineyards with a Kimmeridgian subsoil. This soil type is only found in Burgundy, Champagne, and some parts of southern England. This subsoil comes from a 180 million-year-old geologic formation of decomposed clay and limestone, containing tiny fossilized oyster shells. This soil type produces wines with a unique minerality and salinity that is often hard to find in wines, especially Chardonnay. 6-year-old barrels are used in order to preserve the freshness and minerality of the wine, rather than bombard it with oak.
