St Hallett Eden Valley Riesling 2019
The grapes are harvested in the early hours of the morning, pressed cold and the juice fermented in stainless steel. Fermentation lasts 14 -20 days at 12-14 degrees to preserve the delicate fruit characters of the variety. The higher altitude, cool nights and mild day time temperatures are ideal for producing immaculate wines with fresh acidity.
The palate is balanced with a fine steely texture supported by a backbone of crunchy acidity. The finish is long, elegant and complex.
