A fortified wine made from the white Palomino grapes of Andalusia, Spain; Sherry is produced in a variety of dry styles. Sherry is an anglicisation of Jerez, a centre of viniculture since winemaking was introduced to Spain. By the end of the 16th century it had a reputation in Europe as the world's finest wine. There are two basic types: Sherry-Fino (fine), the driest and palest of the traditional varieties, and Oloroso (scented), a darker and richer wine. All other styles are a variation. Sherry must come from the triangular area of the province of Cádiz between Jerez, Sanlúcar de Barrameda, and El Puerto de Santa María and is aged in the 'solera' system where new wine is put into barrels at the beginning of a series and periodically a portion is moved into the next barrel. Once bottled Sherry does not benefit from further ageing.
