Shaw & Smith M3 Chardonnay 2017
Cousins Martin Shaw and Michael Smith built their winery high in the Adelaide Hills in 2000 so that for the first time they could press whole bunches of chilled grapes to make their premium M3 Chardonnay. The fruit is from their Lenswood Vineyard, which was originally planted for sparkling wines, but now used to make their fine still wine. This Shaw and Smith M3 Chardonnay is a magnificent vintage of this modern Australian Chardonnay, with generous citrus and stone fruit flavours, not to be missed.
This well-balanced Chardonnay from Shaw and Smith M3 is full of fragrance and texture, with flavours artfully built and balanced around a staunch mineral spine. The nose allures with flowers, citrus and stone fruits, opening into a palate layered with apple, almond, spice, fig and marzipan. Notes of toasted oak and cinnamon rise and resonate at the finish making it excellent with pan-fried fish dishes.

The grapes come from exceptional estate vineyards at Lenswood, Lobethal and Woodside, and the wine has always been known for its complexity, part due (although you mightn't realise this) to its use of mlf; fermentation in a cool, largely underground, cellar is another part of the explanation for the unfailing ability of the wine to deliver the goods.
