History credits blind monk, Dom Pierre Pérignon as discovering the secrets of Champagne in his abbey's cellars in the 17th century, and British and European nobility for spreading the message of this unique Sparkling wine. A careful blend of Chardonnay, Pinot Noir and Pinot Meunier, its rules are strict, demanding secondary fermentation in the bottle to create carbonation. Vintage Champagne must come from a single vintage and matured for at least three years, whilst Non-Vintage must blended from grapes from more than a single vintage, and matured for at least 15 months to the style of the maison (house). The resulting styles include the very dry and savoury Brut, perfect with food; Sec, a medium-dry style, perfect for a party or breakfast event, Doux, a sweet, dessert style; Rosé, made by blending some still red wine into Champagne; Blanc de Blancs, a creamy fruity style (usually made from Chardonnay but sometimes a blend); and Blanc de Noirs, a punchy, full-bodied style made from the two Pinots. Perhaps its allure is best summed up by one of its most famous names, Lily Bollinger: “I only drink champagne when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not in a hurry and drink it when I am, otherwise I never touch the stuff unless I am thirsty.”
