Cape Mentelle Cabernet Sauvignon 2016
Established in 1970 by wine industry pioneer David Hohnen, Cape Mentelle is one of Margaret River's founding wineries. Cape Mentelle Chardonnay is a fully expressive wine of both richness and minerality that speaks loudly of Margaret River. The Cape Mentelle house style is to allow the pure expression of fruit with minimal intervention by the winemaking team; allowing the grapes to “speak” as to when is the optimum time is to pick.
Lifted aromatics of brooding dark forest fruits and moist forest floor immediately leap out, together with black cherries and dark chocolate. The bouquet is further enhanced by hints of flint, wild thyme and glazed orange peel. There is a vibrancy of concentrated blackberry fruit with dark bramble and vanilla spice. The compact, refined tannins are velvety and supple with lingering hints of minerality and mocha nuances that carry through to the finish - Pairs well with veal chops, vegetarian burger, hanger steak.

Vintage 2012 - Handpicked fruit was berry sorted before fermentation of 30 days on skins; 18 months in French oak (50% new). This is a glorious cabernet, its blackcurrant, cedar and spice bouquet leading into a seamless, perfectly balanced palate with cassis and redcurrant fruit framed by cedary oak. The amazing tannins, softly woven into the fabric of the fruit, gives this wine its ultimate class. Very different to the '11.
